As promised...a family favourite
ngredients:
1 12-14 inch pizza crust
2 Tbs olive oil
1/2 a chopped small onion
1 cup chopped broccoli
1/2 frozen or canned artichoke hearts , chopped
1 small zucchini, sliced (1/4-1/2 inch thick)
1/2 cup chopped asparagus (you can use the tips only but I think this wastes them)
1 cup julienned fresh spinach
1/2 cup pesto sauce
2 cups low fat shredded regular or soy mozzarella cheese
1/4 cup grated parmesan
Directions:
(1) Pre-heat oven to 450F
(2) Prebake pizza crust for about 5 minutes, remove from ovn and let cool a little
(3) Heat the Oil in the largest skillet/wok you have and saute the onions 3-4 minutes until translucent
(4) Add Broccoli, artichokes, zucchini and asparagus, cook fro 4-5 more minutes until veggies begin to soften a little
(5)Remove from heat, add the spinach and stir until it begins to wilt (about 1 minute)
(6) Spread the pest evenly over the crust, then the veggies, then top with the two cheeses
(7) Bake for 10-12 minutes, until cheese melts, remove from oven and let stand for 2-5 minutes then serve.
Side notes: I love to put sun-dried tomatoes on this (either the ones packed in oil or ones that have been dried and blanched) just add them at the same time as the broccoli
This Pizza has a ton of iron in it, drink a glass of OJ or eat an orange for desert to ensure maximum absorption!
