Hey All, this is a simple recipe that I have had every day for the past two weeks for lunch. So yummy and so easy.
Take 1 cup brown rice (I make a big batch in the rice cooker then reheat one cup a day), mix in a table spoon of tahini (ground up sesame seeds), cover with 2 cups steamed greens (use a mix of your favourite veggies like spinach, kale, broccoli, swiss chard, baby bok choy, rapini or all of the above), I only steam them for two minutes because I like mine crunchy then pour on a few tablespoons of lemon juice. Sometimes I add some fried tofu to the rice (my hubby may have some leftover chicken).
Sprinkle some seeds on for extra crunch (pumpkin, sunflower etc.)
Add some grated and peeled ginger to the tahini, some toasted sesame oil, or some tamari
Use noodles instead of rice
You can play with the portions, I only eat a half cup of rice but my husband eats way more.
Eat with an orange to absorb all the iron and calcium from the green veggies!
So, what's for dinner?
